Supplies needed to make Mississippi Pork Roast

  • A slow cooker (6 quart or larger)
  • Tongs or two forks for shredding

Ingredients

Pork Loin Roast (2-3 pounds) – The star of the dish! As it cooks low and slow, it becomes fork tender and soaks up all that yummy flavor.

Ranch Seasoning Packet – Adds a tangy, herby taste that seasons the meat and sauce.

Au Jus Gravy Packet – Creates a savory broth that makes those pork drippings so delicious.

Banana Pepper Rings (with the juice) – Both the peppers and their brine go right into the slow cooker, giving the roast that delicious tangy Mississippi flavor.

Butter – Melts down into the broth as the roast cooks, adding richness.

How to make Mississippi Pork Roast

First, place the pork loin in the bottom of the slow cooker.

Next, pour over the entire jar of banana peppers and brine over the roast, letting that tangy brine settle around the meat.

Then, sprinkle the ranch seasoning packet and the au just gravy packet evenly over the top of the roast.

After that, place the stick of butter directly on top, cutting the butter into slices so it can be dispersed evenly over the roast.

Finally, cover and cook on high for 4 hours, or until the pork shreds easily with a fork. Once it is done, shred the roast right in the slow cooker so it can soak up all that tangy, buttery brother before serving.

Tips

  • Don’t skip the banana pepper juice! It is what gives this roast its signature tang. So, use the whole jar! You’ll thank me later, I promise!
  • If you prefer a milder flavor, use fewer banana pepper rings but still add all of the brine. I’ve used many brands of banana peppers and I have never came across a spicy one but I am not sensitive to spicy foods so just follow what you and your family loves!
  • Let the roast rest in the broth a few minutes after shredding so it absorbs even more flavor.
  • Leftovers keep well and taste even better the next day once the flavors have had time to meld.
  • This recipe is such a crowd please and is great for entertaining!

Serving Ideas

  • Piled onto a toasted bun for a Mississippi pulled pork sandwhich
  • Over mashed potatoes to soak up the broth (my favorite way to eat it!)
  • Stuffed into tacos with extra banana peppers on top
  • Served alongside rice or egg noodles
  • Tossed onto a baked potato
