- A skillet or pot to cook your meat and a griddle to cook your quesadillas
- Measuring cups

Ingredients

Ground Beef – The star of the show! It gets seasoned like a burger to add that classic burger flavor.
Onion – Diced and cooked in the beef mixture, adding a hint of sweetness to that burger taste.
Flour Tortillas – My favorite to use in this recipe because they crisp up nicely in the skillet and hold all the beef and cheese mixture without falling apart.
Seasonings – Onion powder, smoked paprika, and hamburger seasoning are the seasonings used in this recipe – each playing an important part of flavor!
Colby Jack Cheese – Melts perfectly and holds the quesadilla together
Burger Sauce – A mayo and ketchup based sauce with tangy pickle juice, mustard, onion powder, and smoked paprika. It is what makes these taste just like a restaurant favorite!
Burger Toppings – Lettuce, onion, and pickles finish these off just like your favorite classic burger!

How to make Cheeseburger Quesadillas



First, whisk together the burger sauce. In a bowl, combine the mayo, ketchup, pickle juice, mustard, onion powder, smoked paprika, and add salt and pepper to taste. Next, cover and refrigerate your sauce while you prepare the rest of the ingredients – giving the sauce time to marry those flavors together while they hang out in the fridge.
Meanwhile, cook the beef mixture. Add the diced onion, onion powder, smoked paprika, hamburger seasoning (I used this seasoning), and ground beef to your skillet over medium heat. As it cooks, break the beef apart as you go, until the meat is completely browned and the onion is softened. Once done, drain any excess grease.
Then, assemble the quesadillas. Lay out the flour tortillas and sprinkle the shredded cheese over one half, followed by a portion of the seasoned beef mixture. Then, add a little more cheese on top of the meat to help keep everything held together. Finally, fold your tortilla in half.
After that, cook the quesadillas in a lightly greased skillet over medium heat for 2-3 minutes per side until golden brown and the cheese is completely melted.
Once your quesadilla is cooked, open it up and top it with your favorite burger toppings. Fold it back over, slice, and serve with the burger sauce for dipping!




Tips
- Don’t overfill your tortillas. Too much filling makes them really hard to fold and flip without all the filling spilling out.
- Let the burger sauce chill while you cook the beef. It will thicken slightly and the flavors come together, making the sauce even more tastier.
- A griddle works great here if you are making a big batch of quesadillas for a crowd
- Swap the Colby Jack cheese for any cheese you have on hand. American cheese works great, too!
- Add your diced pickles right into the beef mixture for even more of a tang!

Notes
