Cheeseburger Quesadillas
All the classic cheeseburger flavors tucked into a warm, crispy, cheesy tortilla and dipped into a delicious tangy homemade burger sauce. A quick, delicious, kid approved dinner or lunch that comes together in about 30 minutes!

Burger Sauce
- 2 tablespoons Pickle Juice
- 1 cup Mayo
- ¼ cup Ketchup
- 1 teaspoon Mustard
- 1 teaspoon Onion Powder
- ½ teaspoon Smoked Paprik
- Salt and Pepper, to taste
Ground Beef Mixture
- 1 pound Ground Beef
- ½ medium Diced Onion
- 1 teaspoon Onion Powder
- 1 teaspoon Smoked Paprika
- 1 tablespoon Hamburger Seasoning
For Assembly
- 2 cup Colby Jack, Shredded
- 8 Flour Tortillas, burrito sized
- Your favorite burger toppings - we love pickles, onions, and lettuce
First, mix together the burger sauce. In a bowl, whisk together the mayo, ketchup, pickle juice, mustard, onion powder, smoked paprika, and add salt and pepper to taste. Cover and refrigerate your sauce while you prepare the rest of the ingredients, giving the sauce time to marry those flavors together.
Next, cook the beef mixture together. Add the diced onion, onion powder, smoked paprika, hamburger seasoning (I used this seasoning), and ground beef to your skillet over medium heat. Cook, breaking the beef apart as you go, until the meat is fully browned and the onion is softened. Drain any excess grease.
Then, assemble the quesadillas. Lay out your flour tortillas and sprinkle your shredded cheese over one half, followed by a portion of the seasoned beef mixture, then a little more cheese on top to help keep everything held together. Fold your tortilla in half.
Finally, cook the quesadillas in a lightly greased skillet over medium heat for 2-3 minutes per side until golden brown and the cheese is completely melted. Once your quesadilla is cooked, open it up and top it with your favorite burger toppings. Fold it back over, slice, and serve with the burger sauce for dipping!
- Don't overfill the tortillas or it will be hard to flip them
- Swap Colby cheese for your favorite cheese - American cheese works great here, too!
- Burger sauce can be made ahead and stored in the fridge for up to a week.
