Easy Beef and Potato Burritos with Chipotle Ranch
Beef and potato burritos are a weekly staple here. My kids call them potatoritos. These easy beef and potato burritos with chipotle ranch are budget friendly, rivals fast food, cooks up in one pot, and kids love it!
These burritos have some of our favorite flavors wrapped up in one tortilla. They are cheesy, creamy, and spicy from the cheese and ranch. Kids love potatoes and tacos so this recipe just made sense!

There is just something about the combination of potatoes and taco meat combined together in one dish that my and my family love.
The sweet little golden potatoes, with the melty cheese, along with the spicy chipotle ranch, and the delicious taco meat is just so tasty when wrapped together in a tortilla. It reminds me so much of takeout except it is done right in your own kitchen – no need to go anywhere or pay takeout prices.
It is a perfect weeknight dinner because it is finished cooking in less than 30 minutes and kids love it!

Supplies needed to make Beef and Potato Burritos with Chipotle Ranch
- Cutting board and knife for quartering your potatoes
- A cheese shredder, I have this exact one
- A pan for cooking your ground meat and potatoes in
Ingredients

Beef – I lay out my frozen ground beef early enough in the day so it is completely thawed before I begin cooking to ensure this meal is super quick to come together.
Taco Seasoning – We love anything taco flavored – maybe that is why this will always be a family favorite!
Potatoes – My favorite potatoes to use for this dish is baby yukon gold. They are slightly sweet and cook up super fast.
Homemade Ranch – I love using my homemade buttermilk ranch for this recipe and adding in a squeeze of lime and some adobo sauce from a can of chipotles in adobo sauce.
Chipotles in Adobo Sauce – This is so important to turn your ranch for normal to spicy, perfect for these burritos!
Shredded Cheese – You can use any shredded cheese! I used Monterey Jack because I like the way it melts and gives that similar tang that mild cheddar does while adding in a bit of spice!
Lime – We love the flavors of lime in our southwestern foods!

How to make Beef and Potato Burritos with Chipotle Ranch
First, begin by prepping your potatoes and cheese. Shred your cheese and quarter your potatoes. You could always use cheese that is already shredded but I like to shred the cheese myself because it melts to much better!






Then, add your ground beef to a pan with a bit of oil and begin browning your meat.
Next, once your meat is completely cooked, add your potatoes to a pan along with about a cup of water and your taco seasoning. Stir everything together and place a lid on the pan. Over medium heat, allow your potatoes to cook all the way through, checking on them frequently to ensure the potatoes are not sticking to the bottom of your pan. If they are taking a little longer to cook, just turn your heat down to medium low and place the lid back on the pan.









Finally, check your potatoes with a fork to ensure they are cooked all the way through. You may have to check a couple of potatoes. Once the potatoes are completely cooked, squeeze a quarter of a lime over the pan.



Additionally, using our super easy and delicious homemade buttermilk ranch, squeeze a quarter of a lime and a few tablespoons of adobo sauce into the ranch and stir well.






Now it is time to plate everything up! Grab your tortilla, add a bit of cheese on the bottom. Then, add the beef and potato mixture on top of the cheese. Finally, add your chipotle ranch and wrap your tortilla into a burrito and enjoy!






Tips
- You can use any types of cheese – mild cheddar, sharp cheddar, colby, colby jack, monterey, monterey jack – whatever cheese you have on hand or prefer!
- I love using burrito sized tortillas for this meal but you can use any sized tortillas you choose.
- This meal makes both a great lunch and a great dinner.
- Don’t like lime? No problem! Just leave it out!

Tips
- If the potatoes haven’t cooked all the way, just add a bit of water and place your lid back on the pan and cook a few more minutes. The little yukon potatoes cook relatively fast but some stoves cook a little different.
- Use any cheese you like!
