Slow Cooker Smoked Sausage and Potato Corn Chowder

A smoky, brothy, slow cooker soup that your whole family is sure to love. Great for any time of year! The sausage, potato, and corn come together so well in this soup. The best part: The slow cooker does all the work for you!

Ingredients
  

  • 1 lb Smoked Sausage sliced
  • 6 medium Yukon Gold Potatoes sliced, measured into a 4 cup measuring cup
  • 16 oz Corn plain or fire roasted
  • 1 small Onion chopped
  • 1 small Red Bell Pepper chopped
  • 2 32 oz Cartons of Chicken Broth
  • ½ cup Heavy Cream
  • 1 tsp Dried Oregano
  • 1 ½ tsp Onion Powder
  • 1 tsp Cumin
  • ½ tsp Garlic Powder
  • Salt + Pepper to taste

Instructions
 

  • Chop your onions and peppers to your desired size - we like using our vegetable chopper for this step!
  • Then, quarter your potatoes and slice your sausage. We measured our potatoes into a four cup measuring cup for reference! Quartering our potatoes left them to be about bite size.
  • Add the above ingredients to your slow cooker along with your corn and broth.
  • Finally, add in your seasonings.
  • Cook on low for 5-6 hours or on high for 3-4 hours, making sure that your potatoes are tender.
  • Before serving, turn off your slow cooker and add your heavy cream.
  • Let cool a bit before serving.
  • I love eating this without any extra toppings but this would be delicious with corn chips, cilantro, shredded cheddar cheese, and a little sour cream on top.

Notes

  • I like serving our Smoked Sausage and Potato Corn Chowder with parmesan and cilantro on top. You could also top with cheddar cheese, sour cream, tortillas, crackers, or hot sauce. 
  • If you don't have Yukon Gold potatoes, russet potatoes will work fine in this recipe!
