Marry Me Butter Beans

A creamy, garlicky, one skillet dish that is ready in 30 minutes or less. The sun-dried tomatoes and parmesan make this a simple pantry staple dinner that tastes like something fancy!

Ingredients
  

  • 1 tablespoon Butter, salted
  • 1 tablespoon Sun-dried tomato oil
  • 2 teaspoon Garlic, minced
  • 1 small to medium Onion, chopped
  • 1 tablespoon Bouillon Base, chicken or vegetarian
  • ½ cup Sun-dried tomatoes, jullienned
  • 4 cans Butter Beans, drained & rinsed
  • 1 cup Water
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese, shredded
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Oregano
  • Salt and Pepper to taste

Instructions
 

  • Heat the butter and sun-dried tomato oil in a large skillet over medium heat. Add garlic and onion and sauté for 5 minutes, until onions are soft and translucent.
  • Add your garlic powder, onion powder, and oregano to the pan and stir until the oregano is fragrant.
  • Add your beans, bouillon base, sun-dried tomatoes, and water. Allow to simmer for a 10 minutes.
  • Lower the heat and stir in the heavy cream and parmesan cheese until the sauce becomes smooth.
  • Let simmer for a few more minutes, allowing the sauce to thicken slightly.

Notes

  • Serve with crusty bread, steamed broccoli, or stir in spinach to get some extra greens. 
  • For a thicker sauce, simmer uncovered for a few extra minutes before adding your cream and parmesan cheese. 
  • Swap in a vegetable bouillon base instead of chicken to make this vegetarian.
