Supplies needed to make Simple One Pot Cajun Pinto Beans with Rice
- I love using my electric skillet for one pot dinners
- Measuring Cups
- A wooden spoon or spatula for stirring
- Cutting board and knife for dicing your bell pepper
Ingredients

Pinto Beans – I used two 30 ounce cans of pinto beans, both drained. You could really use any beans but pintos really are where it is at for this meal!
Ground Pork – A very budget friendly meat, I think ground pork goes perfect in this skillet! I seasoned my meat with cajun seasoning first to help bring in a lot of flavor in this fish!
Smoked Turkey Sausage – Smoked sausage brings in that smokiness I think a pot of beans needs. Plus, an added bonus: kids love sausage!
Green Bell Pepper – The green bell pepper gave it that southern flare to me. You definitely can go without it, but I think it added a lot to this dish!
White Rice – I used jasmine rice because that is what I had on hand, but any white rice will work!
Chicken Broth – Of course, you can use water to replace the chicken broth! Because the rice and beans create a sauce as they cook, I wanted to add some additional flavor by using chicken broth.
Cajun Seasoning – I used Aldi brand but any brand will work!

How to make Simple One Pot Cajun Pinto Beans with Rice
First, brown your ground pork on medium heat and season it with your cajun seasoning. I measure a lot of seasonings with my heart based on what I know my family loves.
You can always do as little or as much cajun seasoning as you like. I used about one teaspoon in the meat while it was cooking. You can also season your meat with some cajun seasoning now and then add a little more once the beans are added.
After the ground pork has finished cooking, add your smoked turkey sausage to the skillet. I love using turkey sausage from Aldi because it is low in fat but really flavorful! Once the sausage has cooked through, go ahead and add your diced green bell pepper.






Then, once the pepper, sausage, and ground pork has cooked for a couple of minutes, add your cup of rice and toast it slightly. This will only take a few minutes. Once you start seeing some of the rice become a little toasted, add both cans of pint beans on top and stir everything together.



Next, pour in your chicken broth, turn your skillet on medium low, and cover until your rice is fully cooked. This should take about 20 minutes. I tend to cook the rice according to the instructions on the package but instead I used three cups of water to the one cup of rice. Keep an eye on your skillet while it is cooking.
Finally, serve with a side of green beans and a slice of buttered bread. It’s time to eat!

- You can use any ground meat that you’d like. I love ground pork in this skillet dinner but ground turkey would do great, too!
- Add a side of green beans, peas, or broccoli and a slice of homemade buttered bread. It just makes this dish so comforting!
