Loaded Baked Potato Skillet

This loaded baked potato skillet is such an easy meal to throw together and rivals the original baked potato - plus, it has simple ingredients. It is budget friendly, made in one skillet, cooks up in around 30 minutes, and you can shop for all of your ingredients at Aldi (win-win!).

Ingredients
  

  • Golden Baby Potatoes
  • 1 lb Bacon fried until crispy
  • 1 lb Ground Meat (turkey or beef work great!)
  • 1 can Chili Seasoned Pinto Beans
  • 1 package Chili Seasoning
  • 1 bag Broccoli frozen
  • 8 oz Cheddar Cheese shredded
  • Sour Cream (optional topping)
  • Scallions (optional topping)

Instructions
 

  • First, cook up your package of bacon until crisp. I cut my bacon into bite sized pieces before cooking but you can always cut them up after they've been cooked and cooled. I just find it easier to begin with this step rather than ending with it. Set your bacon to the side and add your ground meat to the dish. I used a pound of ground meat I already had cooked and prepared from the freezer, but you can cook your ground meat here.
  • Then, once your meat is cooked through, add your halved baby golden potatoes to the skillet along with a can of chili seasoned beans and a packet of your favorite chili seasoning (I used Aldi brand, but you can use your favorite chili seasonings here!). Add in a cup (or two) of water and allow it to come to a slow simmer. You will want to watch your skillet during this step and add water as it is needed.
  • Next, once your potatoes have cooked through, add your frozen bag of broccoli and stir the broccoli into the skillet. Let the skillet come back up to a slow simmer, then turn the heat off of your skillet.
  • Finally, add your bacon and favorite loaded baked potato toppings here. Our favorite toppings are cheddar cheese and scallions. Once it is plated, we will add things like sour cream or even hot sauce!

Notes

Tips

  • You can use any ground meat. I used ground turkey in this dish for this night but ground beef is excellent in it, too!
  • Favorite toppings include scallions, cheddar cheese, sour cream, and butter. You can use whatever toppings you enjoy best on your loaded baked potato!
  • Baby yellow potatoes seem to cook the fastest, but you can use any potato for this dish!
