I love diner food but sometimes takeout isn’t always in the budget. These Easy Patty Melts remind me of one of our family’s favorite fast food joints but are made at home and even more delicious!
This patty melt recipe takes everything you love about a classic grilled cheeseburger and turns it into a hot, melty sandwich piled with sweet caramelized onions and a tangy homemade sauce.
Best of all, it all comes together quickly with simple ingredients that you can easily find at any grocery store.

These Easy Patty Melts have become one of my family’s favorite dinners because everything cooks on the same skillet so cleanup stays simple.
Since the onions caramelize while the sauce comes together, you can have this whole meal on the table in under an hour. Once everything is ready, you simply stack your sandwich, grill each side of your bread, and dig in!
The sauce is really what makes the whole recipe so addictive. Every bite gets coated in that creamy, tangy flavor. Once you lay on melty cheese and your sweet caramelized onions between your buttery toasted bread, you end up with a sandwich that tastes just like your favorite diner dinner.

Ingredients

Ground beef – Seasoned simply with Worcestershire and onion powder, this forms the base to every patty.
Worcestershire sauce – Mixed into the beef and into the sauce, this adds a deep rich flavor to every bite.
Caramelized onions – Sliced and cooked low and slow, these bring a sweetness that balances out the tangy sauce.
Sliced bread – Rye or sourdough works great here, since the sturdy texture holds up well once it is toasted in butter.
Butter or Mayo – Used to grill your sandwiches and makes the bread yummy and golden.
Sliced cheese – Melted between the beef and bread, cheese ties the whole sandwich together.
Mayo and Ketchup – Together, these form the creamy base to the sauce.
Pickle juice and chopped pickles – Stirred into the sauce, pickles add the perfect tang and a bit of crunch.
Smoked paprika, onion powder, and garlic powder- These spices round out the sauce with a smoky dept.

Supplies needed to make Easy Patty Melts
- A large skillet or flat top for the beef and onions
- A mixing bowl for whisking together the sauce
- A whisk or fork to combine your sauce ingredients
- Measuring cups and spoons
- A spatula for flipping the sandwiches
How to make Easy Patty Melts






First, in a large skillet or flat top cooker over low to medium heat, add your sliced onions to a bit of oil and cook until they start to turn translucent. Then, sprinkle ion your brown sugar and a pinch of salt and continue to cook the onions slowly so the onions caramelize without burning.
Meanwhile, in a mixing bowl, whisk together your mayo, ketchup, Worcestershire, pickle juice, chopped pickles, smoked paprika, onions powder, and garlic powder until they are well combined. Season with salt and pepper to taste, then set the sauce aside.


Then, place your uncooked beef in your skillet along with the seasonings and Worcestershire and cook until browned. I spread my meat onto the flat top, allowing the meat to cook on one side before breaking the meat apart. This gave the meat a broken patty texture.


After that, butter or spread mayo on each slice of bread. In a clean pan over medium heat, place a slice of bread buttered side down, and layer on your cheese, beef, another slice of cheese, and caramelized onions. Then, add your final slice of bread on top, butter side up.
Once the bottom turns golden, flip the sandwich carefully and continue toasting until the second side is golden and the cheese melts completely.
Finally, remove the patty melt from the pan, cut in half, and serve immediately with the sauce on the side for dipping.
Tips
- Cook the caramelized onions first since they take the longest, then keep them warm while you finish the rest of the ingredients.
- Use low to medium heat when toasting the sandwich so the bread turns golden without burning before the cheese melts.
- For extra flavor, cook your ground beef in the same skillet or flat top you used for the onions so you don’t miss on any extra flavors.
- Double the sauce recipe if you like your sandwiches extra saucy or love dipping your fries in it!
