One Pot Spicy Sausage and Risotto Skillet

One of our favorite one pot dinners recently is is this one pot spicy sauce and parmesan risotto skillet. The best part of this dinner is everything is cooked in one pot which means less mess (which means less dishes… ya’ll know how much I love that), and every ingredient is purchased from Aldi, making this a really great budget meal.

Any dinner made in one skillet generally hits our dinner rotation pretty quickly. This one pot spicy sausage and parmesan risotto skillet dinner does not fall short in flavor or ease of preparing. There is very little that needs to be prepared when you are getting ready to cook this meal. Everything goes into one pan so it makes cooking easy and quick. This skillet dinner is slightly spicy from the sausage and creamy from the cheese.

Aldi Ingredients – This salad is one of my favorites because it is creamy and dilly and just so, so good.

Simple – I love how easy it came together and doesn’t require a long list of ingredients to make it delicious.

Budget Friendly – I generally always have nearly every ingredient on hand to make this pasta salad come together easily and quickly. This meal only cost around $16.25 to feed my family of five with plenty of leftovers.

One Skillet – I love that I can whip this together pretty easily and have a side dish to bring to family cookouts and potlucks with friends!

Supplies needed to make Spicy Sausage and Risotto One Pot Skillet dinner

  • I love using an electric skillet for cooking but you can use a skillet, too
  • A wooden spook or wooden spatula for stirring your food

Ingredients

Spicy Sausage – I love using spicy sausage from Aldi. Not only is it affordable, it isn’t too spicy and adds a ton of flavor to the dish.

Boursin Cheese – Boursin cheese adds so much creaminess to this dish without adding any additional cream.

Roasted Garlic Risotto – If you’ve never tried this risotto from Aldi, this dish is the perfect time to try it out!

Broccoli – One of my favorite vegetables, I love sneaking this vegetable in dishes when I can!

Sun-dried Tomatoes – Sun-dried tomatoes add the perfect amount sweet and tart to this skillet dinner.

Chicken Broth – You could always use water, cutting down the cost of this dish, but I add chicken broth wherever I can!

Dried Oregano – Completely option, but I love oregano in most of my dishes.

How to make One Pot Spicy Sausage and Risotto Skillet

First, remove the casing from each sausage link. You could always use ground sausage instead of sausage links, but I found this is the more budget friendly option. Once all the sausage casings have been removed, use your wooden spoon or spatula and separate your sausage into bite sizes. Almost, like sausage meatballs. Then add your dried oregano and begin browning your meat.

Then, add your sun-dried tomatoes. Once your sun-dried tomatoes are add, make an open spot in the center of your skillet, and place your Boursin cheese in the center.

After that, add your broccoli to your skillet. I like to overcook my broccoli in this dish (call me crazy). I’ve found that my kids are more likely to eat it if it blends in a little better. You can always add your broccoli to the dish when the rice is almost finished cooking.

If you choose to wait until the end to add your broccoli, no need to stir, just place your thawed broccoli on top of the rice and place your lid back on the skillet.

Next, add your three packages of risotto, spreading out as evenly as you can, and add your chicken broth. Stir it around gently without disturbing the placement of your Boursin cheese. Add your carton of chicken broth and cover. Cook on medium to medium low until the rice is finished cooking. Cooking times will be different because all stoves and electric skillets cook a little different. Check your risotto often while you are cooking.

Finally, when your risotto is cooked through, remove from heat (or turn your electric skillet off) use your spoon to stir your Boursin cheese into the risotto gently. Let it cool a bit and enjoy!

Tips

  • You can use any risotto mixture from Aldi. This flavor did really well in this dish but I encourage mixing it up to fit your family’s taste!
  • If you don’t like broccoli then no need to add it! I think green peas would be great in this but you could also cook a vegetable and eat it on the side instead.
  • I used three packets of the rice mixture because not only do I have big eaters in my house (hello, teenagers) but I also like to cook with leftovers in mind to make lunch easy the next day.

  • 32 ounce Chicken Broth
  • 12 ounce Frozen Broccoli
  • 1 tsp Dried Oregano
